The Sweet Spot |

If money makes the world go round, candy certainly makes it sweeter. People love their confections and have craved them since the dawn of time. There are as many candy varieties as there are individuals who eat them. Whether it's hard candies, caramels, taffies or truffles, the sweet tooth cannot deny them. Worldwide candy production is a lucrative business, throughout the developed and developing world. Candy factories exist in nearly every land. Moreover, almost every store, whether they sell groceries or not, sells some candy. The shelves are full of stocks, and people empty them dutifully. We buy candy for every circumstance and eat it for every occasion. While people certainly enjoy buying candy, many have found they also enjoy making it. As much as any dessert, candy production is easy enough to manage. The main ingredient, sugar, is a familiar commodity to most people. Also, depending upon varying diet or health concerns, sugar can be substituted. Rules of temperature - the use of water, cream and oils - all these things are simple enough to manipulate if you follow directions. The more usual offerings, like fruity hard candies, rich chocolates, and chewy caramels, have their rules of the road, as well as their do's and what not to do. Equipment is also an issue. Using the precise tool for the job is a good rule of thumb when cooking, this is particularly the case with a dish as definite as candy. Though there are some specialty items, one will use the most tool again and again. It's easy to get accustomed to them quickly and put them to use. Nothing sets a person apart from the crowd like supplying candy that they've created. Someone who walks into a picnic, or arrives at an office, raises a few eyebrows, if they announce, "I just made these truffles." Likewise, one will surely greet friends and family who become known for confectionery excellence with more eagerness at gatherings. No one minds the loud uncle who can make chocolate chips or the brother-in-law who arrives late but always brings fudge. Candy wins hearts and minds (just ask any doctor who has to face a child they just gave a shot!). As the old saying goes, you get more bees with honey than you do with vinegar. Candyland Crafts, a New Jersey-based store, sells all the candy making supplies for the beginning candy maker, as well as the veteran confectionery. They have a broad range of tools, including over three thousand distinct candy molds. They have a reputation for excellent products, and for providing exceptional advice and service to anyone who visits their shop.
